Healthy Stuffed Onions

2 large onions with skin on. Cook these in boiling water for about 15 minutes. When ready peel, halve them, take out the centre leaving only a ring of three or four layers. Make stuffing of chopped parsley, garlic, anchovies, a little ham, half a dozen black olives and a handful of breadcrumbs. Fill the onions with the stuffing, pour a little oil on top. Bake them in a slow oven for an hour.

1 kilo aubergines, cut into long thin slices 1/2 kilo ricotta or mozzarella cheese 100g grated Parmesan 500ml fresh tomato sauce olive oil, salt and pepper and some flour Put the sliced aubergines in a colander, sprinkle with salt and let drain for about an hour. Then dust with flour, fry gently in olive oil, drain on kitchen paper. Put a little oil in a deep china or cake dish. Put a layer of aubergines, cover with thin slices of mozzarella or spread with ricotta, then put a layer of tomato sauce. Continue in this way till all aubergine slices are all used up. The last layer cover with the grated cheese and sprinkle oil over the top. Cook in a moderate oven for 20 to 30 mins.

12 Beef Mediallions 2 tbls olive oil Dash of Worcestershire sauce 200g large oyster mushrooms 3 chopped cloves garlic A handful of rocket leaves Sauce: 25g butter 2 level tbls flour 1 small finely chopped onion 1 tbls chopped parsley bay leaf 350g rich stock 60ml port Prepare the sauce by melting the butter and adding the flour. Cook until the roux is turning brown. Stir in the chopped onion and parsley, bay leaf, thyme. Mix well. Gradually add the stock and Port till mixed well. Cook, stirring all the time till thickened. Place beef medallions into a shallow glass dish. Season well and add olive oil and Worcestershire sauce. Leave in fridge for 1/2 hr. Place the oyster mushrooms in another dish and season. Add sage leaves, garlic and olive oil. Let stand for 1/2 hr. Heat oven to Mark7/220C/428F and bake the mushrooms for 20 mins. Keep warm. 125g mixed tomato, spinach and egg pasta shapes 15ml oilive oil 30ml red pesto 15ml lemon juice 1 clove garlic, crushed 225g roast chicken, without skin 175g cherry tomatoes, halved 6 spring onions, sliced 30ml chopped fresh mixed herbs 15ml toasted walnut pieces Cook pasta until just tender. In a large bowl, mix together olive oil, pesto, lemon juice and garlic. Drain pasta while still warm, and stir in the mixture. Cut chicken strips and add to the cooled pasta with the tomatoes, spring onions. Turn into a serving bowl, add the herbs and walnut pieces. Serves 4.

1 packet lemon jelly 8 oz can pineapple, crushed 1 small can evaporated milk, well chilled A 1 1/2 pint dish Drain the pineapple juice into a measuring jug, make the juice to 1/2 pint with warm water. Dissolve jelly. When jelly has dissolved, let cool. Then add the pineapple. When jelly is cold, whisk the milk until it has doubled. Stir in the jelly mixture into the milk, wait until the mousse is nearly setting before turning it into a dish. Leave the mousse to set in a cool place.

1 roasting chicken, cut into joints 2 oz margarine 2 oz flour 1 pint milk 7 oz can sweetcorn 1 lb potatoes, peeled and sliced Put the chicken joints in an ovenproof dish. Melt the margarine in a pan, remove from the heat and add the flour, then gradually add the milk. Return to pan to the heat, stirring all the time, when it boils add the corn. Pour the sauce over the chicken top with a layer of sliced potatoes. Dot with butter. Bake on centre shelf of oven gas mark 5 or 375F/190C until potatoes are golden brown and meat tender. Serve hot with green vegetables.

2 oz shelled walnuts 1 coffee-cup full olive oil 2 tablespoons breadcrumbs 1 1/2 butter 1 large bunch parsley 2 tablespoons milk Take the shelled walnuts after pouring boiling water over them. Pound them or liquilize. Add parsley, and some of the butter, then the breadcrumbs and gradually the oil. If it is not a thick paste, very green add the milk. A bizarre sauce, but excellent with tagliatelle, or with fish, or filling for sandwiches.

1 large bunch fresh basil ( 2oz leaves only) 1 handful( a generous ounce) of pine nuts 1 handful " " of Parmesan cheese 1 1/2oz olive oil Pound or liquidize the basil leaves, add 1 0r 2 cloves garlic and the pine nuts. Add the cheese. When the pesto is a thick puree' start adding olive oil, a little at a time. Stir it steadily until the finished sauce is like creamed butter. If you want to store 'pesto sauce' put in jars, covered with a layer of olive oil.

225g couscous 6 spring onions, trimmed and chopped 3 tomatoes, diced 6 sun-dried tomatoes in oil, drained and diced 125g pitted black olives 30ml chopped fresh mint 15ml each fresh chopped coriander and parsley 2-3 cloves garlic, skinned and crushed 45ml olive oil juice of 1 lemon Put couscous in a large bowl and pour in 600ml cold water. Leave to soak until liquid has been absorbed. Stir the remaining ingredients into the couscous and season well. Serves 6

8 oz prawns - peeled 2 teaspoons chopped parsley 3 teaspoons chopped gherkins 1 teaspoon capers Yogurt dressing 4 oz. rice - cooked and cooled 4 tomatoes - skinned, deseeded and chopped. Combine the prawns, gherkins, parsley and capers . Add the rice and mix all with yogurt dressing. Serves 2 - 3 as a starter

1 kg pork spareribs cut into 3 cm pieces 1 tablespoon sesame seeds 2tablespoons oil 2 spring onions finely chopped 4 cm ginger, grated 3 cloves garlic, finely chopped 2 tablespoons caster sugar 2 tablespoons wine 1 tablespoon soy sauce 2 teaspoons sesame oil 315ml hot water 2 teaspoons cornflour Dry roast the sesame seeds in a frying pan. Heat oil in a heavy-based frying-pan, brown the spareribs, turning frequently on high heat till golden brown. Drain any excess oil. Add half the sesame seeds, spring onions,ginger, garlic, sugar, wine, soy sauce, sesame oil and water;stir well to coat the ribs. Bring to the boil, cover and simmer for about 50 minutes, stirring occasionally. Combine cornflour with a little cold water and mix to a smooth paste. Add to the pan, stirring constantly, until the mixture thickens. Sprinkle the extra sesame seeds.

1/2 cucumber 375g medium raw prawns 2fl oz rice vinegar 1 tablespoon caster sugar 1 tablespoon soy sauce 1 teaspoon finely grated fresh ginger 1 tablespoon toasted sesame seeds Halve a cucumber lengthwise, remove seeds with a teaspoon and peel skin. Cut flesh into thin slices, sprinkle with salt and set aside for 5 minutes. After rinse to remove salt and pat dry. Place the prawns in a pan of lighted salted boiling water, simmer for 2 minutes. Drain and plunge them in cold water. Allow the prawns to cool, remove the peel but leave tail intact. Place the vinegar, sugar, soy sauce and ginger in a large bowl and stir until sugar has dissolved. Add prawns and cucumber and marinate for 1 hour. Arrange on a serving plate, sprinkle with seeds and serve. Serves 4

50g unsalted butter 1 fresh pineapple, peeled and cut into wedges 1 tablespoon demerara sugar 5 small red chillies 1 lime, juice only Heat butter in a griddle or frying pan. Add the pineapple wedges, sugar and chillies. Cook for about 8 minutes turning once. Remove the pineapple onto to 4 serving plates. Pour the lime juice into the butteryjuices then drizzle over the pineapple. Serve hot.

1 tablespoon vegetable oil 2 stalks lemon grass, finely chopped 4 shallots, finely chopped 2 green chillies, deseeded and finely chopped 600g sirloin steak, cut into finger strips 2 teaspoons brown sugar 1 lemon, juice only 2 tablespoons fresh basil leaves, shredded Heat wok, add oil, then the lemon grass, shallots and chillies, stir-fry for 2 minutes. Add the beef and stir-fry for another 5 minutes Add the sugar, lemon juice and stir-fry for 1 minute more. Season to taste, sprinkle over basil. Serve with steamed rice. Serves 4.
