Healthy Griddled Pineapple with Chilli
50g unsalted butter
1 fresh pineapple, peeled and cut into wedges
1 tablespoon demerara sugar
5 small red chillies
1 lime, juice only
Heat butter in a griddle or frying pan. Add the pineapple wedges, sugar and chillies. Cook for
about 8 minutes turning once. Remove the pineapple onto to 4 serving plates.
Pour the lime juice into the butteryjuices then drizzle over the pineapple.
Serve hot.
