Home-made Stuffed Rabbit

"Home-made Stuffed Rabbit Serves 4. 1 rabbit. 20 gr bay leaves 320 carrots, peeled and cut strips about 3 cm x 0.5cm 200g flour 200g garlic 120ml oil 280g onions 80 g yellow and red peppers rabbit seasoning thyme 160g tomatoes Bone the saddles and legs of rabbit, flatten and keep bones for sauce. Reserve the kidneys for stuffing. Cook carrots in salted water and let cool. Season rabbit with rabbit seasoning and stuff it by placing strips of vegetables, the peeled tomatoes and the kidneys in the middle and roll up in cling-film and let set in fridge for a couple of hours before cooking. Undo the clingfilm, flour rabbit and roast at 180c in oven for 8 - 10 minutes. Let it set and cut into medallions. "Homemade Pizza Dough 250g plain flour 1 teaspoon dried yeast 1 tablespoon olive oil pinch of salt, sugar lukewarm water to bind Method: Sift the flour and salt into a large bowl. Add the sugar and yeast and mix well. Make a well in the centre and add the oil. Pour the water gradually, with a wooden spoon drawing the flour into the liquid. Knead for 10 minutes until the dough is smooth and elastic. Cover bowl with a cloth and leave to stand in a warm place until it doubles about 50 minutes.
