Homemade Meatless Lentil Soup
"Homemade Meatless Lentil Soup 12 ounces lentils (soaked overnight in cold water) 1 onion chopped 1 carrot diced 3 sticks celery, diced 3 1/4 pints hot water some chopped parsley Drain the lentils and add onion and brown for 5 minutes. Add carrot, celery salt and pepper and hot water. Cook on low heat till lentils are tender, about 50 minutes. Rub through a sieve. Bring to the boil again and serve garnished with parsley.
