Hungarian Tripe Soup
500g beef tripe 1 cup sour cream 1 large onion 1 green bell pepper 1 tomato 3 tablespoons oil 1 teaspoon dried marjoram 1 teaspoon flour 1 bay leaf half teaspoon black pepper and grated lemon rind 1 pinch sugar, salt and vinegar to taste Cut the carefully cleaned tripe into strips, and pour a mixture of hot water and vinegar over it. Drain and cook the tripe in plenty of fresh salted water. Drain again. Gently saute' the peeled and finely chopped onion in oil. Fry tripe strips, taking it off heat just for a minute to mix in the paprika. Pour 1 litre of water. Add the sliced green pepper, peeled and sliced tomatoes, bay leaf herbs, seasoning and lemon rind, and cook for ten minutes. Mix the flour with the sour cream and add to boiling soup stirring continuously. Let it boil for a few minutes and add a pinch of sugar and a little vinegar. Serve hot.
