Bones of 1 turkey 3 3 1/4 pints cold water 1 carrot, sliced 1 stick celery, chopped 1 teaspoon chopped onion 1 sprig parsley 1/4 bay leaf 3 black peppercorns 1/2 teaspoon salt (optional) Place all ingredients in a large saucepan. Bring to the boil and simmer, covered for 2 hours. Strain. Makes about 2 1/2 pints soup.
