In a majestic setting the Tomasi sisters have restored the family home where they continue the catering and hospitality business, the inn has rooms and small apartments. The furniture is  the classic alpine type with extensive use of ancient stone and wood, the walls are pretty impressive displaying deer antlers.  The three sisters and two brothers take care of the cuisine, the service, the choice products from the woods and researching healthy and genuine food which is the job of the late malghesi.  The cuisine consists of mainly local products with preferences for the big size game and extensive use of mushrooms and wild herbs. This neighbourhood wine bar sits on a corner of Mountgrove Road where Highbury, Stoke Newington and Finsbury Park collide. But what is a "bothy"?  Those from the Scottish Highlands may know it as a dilapidated hut affording shelter from the wilderness, while the lucky ones from the Isle of Lewis will know it as a semi-legal drinking den.  This particular bothy is almost a mash-up, offering sanctuary in a bit of a no-man's land (with licence to do so). 250g gluten free plain flour          1/2 tsp salt                  3.5g dried yeast 1 tbsp  caster sugar                        37g margarine           175ml milk 1 egg, beaten                                 1 tsp vinegar Method: Place the flour, salt yeast and sugar in a bowl,   add butter and milk just warm, then add egg and vinegar.  Beat until soft and  slightly sticky   Oil a 1/2 kilo loaf tin put the bread mixture into the tin, cover with oiled cling film and leave to stand until the mixture has risen by 3 cm. Preheat oven to 220 C/ 425 F / Gas Mark 7  Bake the bread for 15 min  then reduce temperature to    200 C / 425 F / Gas Mark 6     bake for a further 30 min or until golden brown. Insert a skewer in centre to check if is cooked well. Remove from tin and allow to cool completely before slicing.
