Serves 4 Ingredients 3 large ripe tomatoes 1 onion, finely chopped 1 tsp olive oil 25 - 50 g butter 8 eggs salt and pepper 1 tbsp parsley chopped Method  - Peel, de-seed and chop tomatoes  - Cook the onion in the oil and a little butter until soft and then add the tomatoes  - Cook for 5 minutes  - Beat the eggs lightly with the seasoning and pour them in the mixture  - Stir continuously over low heat until the eggs are barely set  - Remove from heat and continue to stir  - Serve on fresh or toasted Maltese bread

Lowestoft is a port town that developed due to the fishing industry, and also a traditional seaside resort with wide, sandy beaches; two piers and plenty of attractions.  Due to the discovery of flint tools in the cliffs at Pakefield, human habitation in Lowestoft  can be traced back around 700,000 years.  It was settled during the Neolithic, Bronze and Iron Ages, as well as the Roman and Saxon periods.  In 1665, the Battle of Lowestoft took place 40 miles off the coast of the town, resulting in a English victory over the Dutch.  During the second half of the 18th century a factory in Lowestoft produced soft porcelain goods, some of which still exist, collected at the museum in Nicholas Everill Park, Quilton  Bread and the Castle Museum, Norwich. Halva just so happens to be ridiculously close to Helwa tat- Tork, which is, and I hope held gear to many Maltese hearts Ingredients 3 cups honey 1 tsp vanilla extract 1 1/2 cups toasted unsalted pistachos or almonds 2 cups tahini (stirred smooth) Method heat the honey in a heavy - bottomed over medium heat until it reaches 240' or the 'soft ball' stage (syrup dropped into cold water will form a soft, flexible-ball). Allow the honey to cool slightly and add the vanilla and nuts. Gently fold in the tahini and stir until the mixture is well blended. Lightly oil a six cup mold, loaf or cake pan,  Pour the mixture into the pan and cool completely. Wrap the halvah well and refrigerate it for 24 - 36 hours so the halvah's characteristic crystallized texture can fully develop. Cut the halvah while it is cold, but serve at room temperature . Makes about 2 pounds of sweetmeat

This renowned abbey (a National Monument  and UNESCO World Heritage site) was, founded in 1079 by the Benedictine monk Gerard de Corbie, the future Saint Gerard, in the heart of a large forest, and became a powerful institution, controlling numerous priories in Spain and England. It developed along with the popularity of the Santiago de Compostela pilgrimage, and became a major stop-off along the route. The architecture of the 12th century abbey church was strongly influenced by the Saintonge style of Romanesque art, and the edifice is remarkable for its vast chevet.  The main apse is flanked on either side by deep chapels, with which it communicates via spacious bay. Each chapel is bordered by an absidiole opening on to the trmsept.  The Romanesque capitals in the chancel and the bay beneath the church tower are famed for their quality.  The vaulting of which only the beginnings of the cross ribbing survive  and the bell tower with its openings both date from the Gothic period.

Sigtuna Town Hall is probably the smallest town hall in Sweden, perhaps even in Europe. At the place where Erik Segersall most probably had his demesne you will now find Sigtuna Museum. Due to renovatio the museum is closed January - March.  On April 18 it opens up with a new exhibition.  The first phase of the new exhibition on Sigtuna's history will start in August. Sigtuna in Sweden's first town, established in the 970's by King Erik Segersall.  It was both a political and religious centre for centuries.  The town's main artery, Stora gatan, remains the same as it did 1000 years ago.  In 995 Sweden's first coin was made here, ordered by King Olof, so of King Erik, Sigtuna 's founder.   Learn more about the town by picking up a free town map at the Sigtuna Tourist Office, at the Stora gatan 33. No other town boasts as many stones in Sigtuna.  In the town itself there are a dozen or so.  Within the municipality you can find more than 150 inscribed stones.  Runestones were erected mainly during the 11th century and are often raised i memory of someone who once lived in the area.  Some stones tell of voyages.  Many end with a prayer,  ' God help his soul '  The stones were usually placed where others could be found by bridges, along narrow passages and at entrances to homesteads.  Pick up a map showing the locations of the rune stones in Sigtuna town at the Tourist Office.
