Barbuljata Recipe


Serves 4

Ingredients

3 large ripe tomatoes
1 onion, finely chopped
1 tsp olive oil
25 - 50 g butter
8 eggs
salt and pepper
1 tbsp parsley chopped

Method

 - Peel, de-seed and chop tomatoes
 - Cook the onion in the oil and a little butter until soft and then add the tomatoes
 - Cook for 5 minutes
 - Beat the eggs lightly with the seasoning and pour them in the mixture
 - Stir continuously over low heat until the eggs are barely set
 - Remove from heat and continue to stir
 - Serve on fresh or toasted Maltese bread
