Risotto with Chiodini Mushrooms

This is a Traditional recipe from Treviso, Italy. Risotto with Chiodini Mushrooms For 4 Persons: 305grams Vialone nano or semi - fino maratelli rice 300 grams mushrooms 50 grams butter 1/2 glass oil one small onion Parsley (to taste) 400 ml beef stock Grated grana padano cheese Chop the onion and parsley and lightly fry in the butter and oil. Dice the mushrooms and add them to the oil and butter, then slowly cook over low heat for 15 minutes. Flavour with salt and pepper then add the rice. Mix the rice and add some stock, keep adding the stock as the risotto thickens. Continue cooking slowly until the risotto is 'al dente'. Then take the pan off the flame then add a dessertspoon of butter and grated cheese. The rice must remain creamy but 'al dent' Cover the pan for a few minutes and then serve.

Melita Trains - Malta

The tour provides a very informative commentary, lasting approximately 30 minutes as it traverses an 8 km route and passes adjacent to Mdina Main Gate and Casa Notabile.  It moves on through the narrow streets of Old rabat seeing St. Paul's Church, St. Cathald's Chapel, St. Paul's Catacombs and St.Agathas' Complex. The train passes through Ghar Barka and then on to the panoramic views of Mtarfa. The train then passes close to the Old Railway Station and Mdinas's fortifications and then returns to the terminus through the Greek Tunnel.              History of Mellieha Fortification - World War 11 Beach Defence - Tunnara History. Tunnara Museum (Westreme Battery) Westreme Battery was built during the reign of Grandmaster Perellos in 1716, as one of Malta's coastal fortifications.  During the Second World War, when Malta was under the British rule, a beach post and a searchlight room were added.  After the war, it was solely used by the fisherman as a Tunnara store.
