Cool Cucumber and Coriander Soup
"Cool Cucumber and Coriander Soup 2 cucumbers, cut into 2.5 cm cubes 1 large onion, finely chopped 1 celery stick, thinly sliced 600 ml hot vegetable or chicken stock salt and pepper 1x150ml natural yogurt 2 tbsp chopped fresh coriander 1 tbsp chopped fresh parsley Place the vegetables with stock in a pot and cook. When ready pour into a blender until smooth. Transfer to a soup tureen and leave to cool completely. Stir in the yogurt and coriander.
