Healthy Avocado Soup

1 3/4 pints home made stock: beef or chicken 1 large avocado , peeled 3 tablespoons finely chopped parsley 3 tablespoons sherry Heat stock to boiling point, keep warm. Put avocado pulp through sieve. Stir avocado pulp, chopped parsley and sherryinto hot stock. Note: Do not heat soup with avocado pulp over direct heat. The flavour of the avocado is spoiled by too much heat.

Mini Vegetarian Pizzas

1 small green pepper, cut into short thin strips. 150 g mushrooms, thinly sliced 1 medium zucchini, thinly sliced 1 tablespoon oil 4 mini pizza bases 2/3 cup napolitaine pasta sauce 410 g artichokes, drained and quartered 130 g can corn Kernels, drained 1 cup grated mozzarella cheese Preheat oven 210C. Brush two baking trays with oil or butter. Heat oil in frying pan and cook the pepper, mushrooms and the zucchini for 3 minutes. Spread pizza bases with the sauce. Top with the cooked vegetables, artichokes and corn. Sprinkle the mozzarella cheese. Place on the prepared trays and bake for about 15 - 20 minutes until cheese is melted and the bases are crisp. Serve immediately.

Fetta Triangles

1 small onion, finely chopped 300 g large silverbeet leaves 1/2 cup grated cheddar cheese 140 g fetta cheese, crumbled 1 egg, lightly beaten 2 teaspoons oil 2 sheets ready-rolled puff pastry 1 egg, lightly beaten, extra First preheat oven hot 210C (190C gas) Brush two oven trays with butter or oil In a pan fry onion in some oil. In a large bowlwash the silverbeet leaves and tear into pieces. Place in a pan, cover , until soft. Take handfuls of the softened leaves, squeeze off juice and add to the cheese mixture, mix well. Add the egg and combine throughly. Cut each pastry sheet into four squares, divide the mixture between the squares. Fold over to form triangles. Brush with extra beaten egg and place on prepared trays. Bake 25 minutes, until golden.
