Vegetable Cheese Crumble

"Vegetable Cheese Crumble Crumble: 150g plain flour salt and pepper 50g butter 75g Cheddar cheese, grated Filling: 50 g butter 2 onions, sliced 2 celery sticks, chopped 3 carrots, sliced 25g plain flour 450 ml hot vegetable or chicken stock 225g cabbage, cored and shredded 225 g tomatoes, skinned, seeded and chopped. Crumble: Sift flour in a bowl with salt and pepper. Rub in the butter until mixture resembles fine breadcrumbs. Stir in the cheese, blending well. Filling: Place butter in a pan, when melted add onions, celery and carrots. Cook stirring once. Stir in the flour, blending well. Gradually add the stock. Then add cabbage and tomatoes, blending well. Place in an oven dish. Carefully spoon the crumble mixture over the vegetables. Grill under a preheated hot grill, till golden. Serve at once. Chicken Fajitas

"Chicken Fajitas For the fajitas: 2 skinless chicken breasts, cut into strips good pinch of Jamaican jerk seasoning 1/2 tbsp sunflower oil 1/2 red pepper 2 spring onions, shredded 4 flour tortillas 200g fresh salsa 25g grated cheese Salsa: 6 tomatoes, chopped 1/2 red onion, finely diced 1/2 mange, diced juice 1/2 lime 2 tbsp chopped fresh coriander 1/2 mild chilli, chopped Dust the chicken breast strips with the seasoning. Heat the oil in a large frying pan and fry chicken for 5-6 minutes until cooked Add the red pepper and spring onions and fry for 2-3 minutes. Warm the tortillas as directed on packet then spread with salsa and top with chicken mixture. Sprinkle with cheese and roll up. To make the salsa, mix all the ingredients together and chill. "Mango and Strawberry pick-me-up Serves 4. 1 mango 200g strawberries, halved 150 ml natural yogurt 75 ml semi-skimmed milk Cut the mango in half either side of the large flat stone. Scoop out the flesh from both halves and cut off any mango around the stone. Place mango in liquidiser with the strawberries, yogurt and milk. Blend until smooth. Pour into 4 glasses and serve.
