"The life history of freshwater eel The life history of the freshwater eel starts in the Sargrasso Sea where adults spawn and then die. The tiny larvae, known at this stage as leptocephali, are swept slowly northwards on the Gulf Stream. It then takes them three years to reach the coasts of Europe where they exchange their somewhat fish-like shape for that of a tiny eel. At this stage they are transparent ""glass eels"" or elvers. During the next stage they migrate inland up the rivers. Eels in the freshwater phase lasts for about a year and then gradually over the next six years the adult eels change from yellow to silver. Not until they are about 10 years old do they start the journey back to Sargrasso Sea to spawn. What induces and guides the migration of eels is still something of a mystery. Griddle Scones - Breakfast

"Griddle Scones - Breakfast 50g self-raising wholemeal flour 50g self-raising white flour 1 tsp baking powder pinch of salt 25g raisins, chopped 1 egg 150 ml skimmed milk 2 tsp corn oil To Serve: 225 g lean bacon rashers, grilled 6oo ml orange juice Mix together the flours, baking powder,salt and raisins. Beat egg with the 1 tbsp sugar or sweetener and milk. Heat a non-stick pan then add a little oil. Spoon heaped tablespoons of the batter into the pan. Cook for 3 minutes until golden. Flip and cook for 1 to 2 minutes. Make 8 scones. Cut bacon into strips. Scatter bacon on scones. Serve with 150 ml orange juice. "Lentil and Orange Soup 25g butter 100g split red lentils 1 onion, finely chopped 1 stick celery, finely sliced 1/2 medium carrot, grated 1/4 tsp dried thyme 900 ml hot chicken stock 150ml orange juice grated rind of 1/2 orange 1 bay leaf salt and pepper orange rind, to garnish In a pot, place all ingredients, except orange rind for garnish. Bean Lasagne

"Bean Lasagne 175g dried lasagne 1 tsp vegetable oil Boiling water salt BEEF AND BEAN SAUCE: 1 tbsp vegetable oil 1 large onion, chopped 225g minced lean beef 1x450g can baked beans in tomato sauce 2 tbsp tomato puree' 1/2 tsp nutmeg ground pepper 100g Cheddar cheese, grated Boil lasagne in water, oil and salt, al dente Rinse in cold water. To make the sauce, place the oil with the onion, then add the beef. When cooked add the beans, tomato puree', nutmeg , salt and pepper to taste. Layer the lasagne and beef and bean sauce, finishing with a layer of sauce. Sprinkle with the cheese and cook in oven or microwave till hot.
