Baked Sea bass with potatoes and Red Wine Dressing
"Baked Sea bass with potatoes and Red Wine Dressing Serves 4 to 6. A whole fish, scaled and gutted Olive oil, salt and pepper. Potatoes: 4 to 5 tbsp olive oil A pinch or dried red chilli flakes 2 medium potatoes, peeled and cut into 2 cm cubes. Dressing: 1 small red onion 3 tbsp red wine vinegar 3 tbsp red wine 2 pinches caster sugar 6 tbsp olive oil 4 tbsp chopped parsley 1. Preheat oven to 230C. 2. In a large wok, heat oil, add chilli and stir fry potatoes. Lower heat and cover till potatoes are cooked. 3. Place cleaned fish in a large baking tray. Drizzle olive oil and bake for about 20 minutes. 4. Meanwhile place all ingredients except for parsley, in a bowl and season well. Add parsley and mix. 5. When potatoes and fish are cooked.
