"Lentils Burgers 400 g lentils mix 2 tbs olive oil 1 medium onion, finely chopped 1 tbs ginger 2 cloves garlic, crushed 4 tsp ground Coriander 2 tsp ground cumin 2 tsp curry powder 1 medium carrot, grated 1 vegetable stock, cube 200g breadcrumbs 2 eggs, lightly beaten For Burgers: Add lentils to a pan of boiling water, boil uncovered for about 8 mins, or until tender. Drain and squeeze excess liquid from lentils. Process half the lentils until smooth, reserve remaining lentils. Heat oil in pan, add onion, ginger and garlic, cook until onion is soft. Add coriander and spices, stir over heat. Add carrot, celery and crumbled stock and cook stirring, until carrot is soft. Combine lentil puree', reserved lentils, carrot mixture, and 130g of breadcrumbs in a bowl and mix well. "Lemon and honey Crispies 100 g margarine 50 g caster sugar 2 tablespoons honey or golden syrup 2 tsp lemon juice 25 g raisins 100g cornflakes a little chocolate vermicelli, to decorate. Method: Put margarine, sugar and honey into a mixing bowl. Cook for about 3 mins in microwave. Stir to ensure sugar is dissolved. Stir in lemon juice, raisins and cornflakes. Arrange 20 paper cases and pile a small amount of the cornflake mixture into each case. Leave to set. Just before the crispies have set, sprinkle some chocolate vermicelli on top of each.
