Chicken and Pasta Salad

"Chicken and Pasta Salad 2x115g chicken breast fillet 220g fettucine 2 tsp sesame seeds 100g snow peas 125g broccoli 1 medium green pepper, sliced 6 green shallots, chopped Dressing 1/4 cup lemon juice 1 tbsp French mustard 1 tbsp chopped fresh parsley 2 tsp grated fresh ginger 1/4 cup water Poach, steam or microwave chicken until tender; drain, cool, slice finely. Add fettucine to large saucepan of boiling water, boil rapidly, uncovered, until just tender. Toast sesame seeds on oven tray in moderate oven , cool. Drop peas and broccoli, pepper, shallots and chicken, sprinkle with the seeds. Add dressing just before serving. Dressing Combine all ingredients in a screw-top jar; shake well. Mushroom and Herb Salad

"Mushroom and Herb Salad 375g baby mushrooms 2 tbsp chopped fresh parsley 2 tsp chopped fresh chives 1 tbsp oil 2 cloves garlic, crushed 1/4 cup lemon juice 1/4 tsp coriander 1/4 tsp cayenne pepper Combine mushrooms, parsley and chives in a bowl. Japanese Punch

"Japanese Punch 300 ml brewed tea, strained 4 cloves 1 cinnamon stick 1/2 tsp ground ginger small mint sprig 1.2 litres lemonade Place the tea, cloves, cinnamon, ginger and mint in a bowl. Pour 300 ml boiling water in the bowl and let stand. Strain the tea mixture into a jug and top up with lemonade. Mix well to blend. Serve lightly chilled. "Chilled Cucumber and Yogurt Soup Soup can be made up to 2 days ahead; store,covered, in refrigerator. Stir in yogurt just before serving. This recipe is not suitable to freeze. 2 cucumbers(560g), peeled, seeded and chopped. 1 pear(150g), chopped 1 gherkin(30g) chopped 200g carton low-fat plain yogurt. 11/2 cups water 1 small chicken stock cube, crumbled 1/4 cup fresh mint leaves Blend or process all ingredients until smooth. Cover, refrigerate several hours before serving. Serves 4.
