"On one of the most famous historical site of the 101 st Airborne " Shortly after sunrise on Tuesday, June 6 th , 1944, thousands of Allied troops stormed ashore in Normandy to begin the greatest amphibious assault in history. Earlier that morning, however, paratroopers and glidermen of the 82 nd and 101 st Airborne Divisions had been landed behind the German beach defenses, their mission to take and hold strategic points inland and to contain any counterattacks aimed at driving the invaders back into the sea. Starting at 00:15, in the pre -dawn darkness of D-Day Gen. Maxwell D. Taylor's paratroopers of the 101 st Airborne Division became the first Allied soldiers to set foot on French soil, and for 33 consecutive days they carried the fight to the enemy. Breakfast Kedgeree

175 g long -grain rice and wild rice, mixed 225 g smoked haddock fillet 150 ml skimmed milk 25 g butter grated rind and juice of 1 lemon 90 ml chopped fresh parsley 2 hard-boiled eggs, roughly chopped salt and pepper Boil rice until tender. Drain well. Place fish in a saucepan with the milk and simmer for about 5 minutes. Flake the fish, discarding skin and bones. Melt the butter in a large frying pan. Add the rice, fish, lemon rind and juice. Cook over a high heat until piping hot. Stir in the parsley and eggs and warm. Now it is ready toe serve.

Homemade Fruit Jelly

juice of 4 large lemons 30 ml powdered gelatine 900 ml tropical fruit juice or drink Put lemon juice into a large bowl and sprinkle over gelatine . Leave to stand until it is sponge-like in texture. Place over a pan of gently simmering water until the mixture clears. Stir in the tropical juice. Rinse out six jelly moulds with cold water but do not dry. Pour in the fruit liquid, cover and refrigerate for at least 5 hours until set. To serve, dip the whole moulds very quickly in hot water , pour off any water that has gathered on top of the jelly, then invert on to a serving plate and shake the mould hard. Lift off the mould. Serve with fruit salad or custard.

Hot And Sour Fish

15 ml olive oil 5 ml ground turmeric 50 g onion, skinned and finely chopped 1 hot green chilli , deseeded and finely chopped 225 g courgettes, thinly sliced 50 g frozen peas 350 g haddock fillet, skinned and cut into bite-size pieces 10 ml lemon juice 60 ml hoisin sauce salt and pepper noodles to serve Heat oil in frying pan. Add turmeric , onion, chilli , courgettes and peas and stir-fry over high heat for 4 - 5 minutes. Add fish to the pan with the lemon juice, hoisin sauce and 150 ml water. Bring to the boil and simmer, uncovered for 1 - 3 minutes. Season. Serve immediately with freshly cooked noodles.

Stir-Fried Noodles with Shredded Green Vegetables

175g thread egg noodles 45 ml vegetable oil 4 spring onions, trimmed, quartered and shredded 1 courgette, quartered and shredded 1/2 green pepper, deseeded and cut into thin strips 75 g spinach, finely shredded 2.5 cm piece of fresh root ginger, peeled and chopped 1 garlic clove, skinned and crushed 1 chicken stock cube, crumbled 15 ml hoisin sauce salt and pepper celery leaves, to garnish Bring in a large saucepan of salted water to the boil, add the noodles, remove from heat and leave to soak 4 minutes. Drain well. Heat 30ml oil in a wok. Add vegetables, ginger and garlic and stir-fry for 2 minutes. Add the remaining oil to the pan, then add the noodles and stir-fry for 2 minutes. Add the crumbled stock cube, hoisin sauce and 15ml (1 tbsp)water and cook for 2 minutes, lifting and mixing the noodles with two forks. Season with pepper, garnish and serve immediately.
