Egg and Bacon Rolls
"Egg and Bacon Rolls 4 crispy bread rolls 2 bacon rashers, derinded and finely chopped 50g mushrooms, finely chopped 4 eggs salt and freshly ground pepper Slice the tops off the rolls and scoop out the centres. Reserve the tops. Place bacon and mushrooms in a bowl and cook. Drain thoroughly, then divide evenly between the bread roll shells. Break an egg into each roll, prick the yolk carefully and season with salt and pepper. Cover with bread roll tops and cook in microwave for about 3 mins. Leave to stand 1 min before serving.
