Roll out shortcrust pastry. Spread lightly with anchovy paste or ham spread mixed with melted butter, or very finely chopped ham. Cover with sheet of greaseproof paper. Roll lightly to press spread into pastry. Remove paper. Roll Swiss roll fashion and slice. Or leave flat and cut in sticks or fancy shapes. Bake in very hot oven (450F Mark8) until lightly browned.

2 tablespoons sugar 3 tablespoons honey 8 fluid ounces chicken stock 1/4 teaspoon salt some pepper 2 tablespoons soy sauce 3 pounds spareribs Mix sauce ingredients together and marinate ribs in mixture for at least 1 hour, turning frequently. Remove ribs to rack of roasting tin. Place small amount of water in tin. Roast in moderate oven for about an hour, turning from time to time.

1 2-pound lobster, boiled 2 ounces margarine 1 3/4 pint milk 1 slice onion salt and paprika Cut lobster meat into small pieces. Saute' milk with onion slice. Discard the onion, add lobster meat and seasonings. Heat thoroughly. If wished, lobster coral or liver may be rubbed through a sieve and added at the last minute. Serves 4
