Trout with Bacon
"Trout with Bacon 8 streaky bacon rashers, derinded 4 trout, cleaned 1 onion finely chopped 2 tbsp chopped fresh parsley salt and pepper watercress, sprig to garnish Wrap 2 rashers of bacon neatly round each trout. Arrange the fish, compactly, head to tail in an oblong casserole. Make two slight incisions in the side of each fish. Sprinkle the onion and parsley over the fish and season to taste. Cover and cook for minutes. Garnish with watercress.
