Calf's Liver Shashlik

1 lb liver cut in 1 1/2 in slices thick 2 medium onions 8 medium sized tomatoes 1/2 lb mushrooms fresh bay leaves Oil, Vinegar,salt and pepper chopped parsley 1 lemon Slice onions, cut tomatoes in quarters, wash mushrooms wash bay leaves . Take 8 in long skewers ; bay leaf liver mushroom, tomato, onion and repeat. Leave to marinate for 1/2 hour. Squeeze lemon juice and chop parsley. Grill for 8 to 10 minutes. Remove to a hot dish. Add little water to the grill pan to make gravy .

Eggs De Jonghe - Breakfast

8 poached eggs 6 ounces fresh breadcrumbs 2 ounces margarine 1/2 tsp garlic salt 1/2 tsp pepper 6 slices luncheon meat, halved paprika Poach eggs foe 2 or 3 minutes only. Combine crumbs with melted margarine and seasonings. Put a thin layer in the bottom of 4 preheated shallow ramekins. Place 2 poached eggs in each dish with 3 slices luncheon meat on the side. Top with the remaining crumbs. Place under grill or very hot oven until crumbs are browned. Serves 4.
