Healthy Avocado Soup


1 3/4 pints home made stock: beef or chicken
1 large avocado , peeled
3 tablespoons finely chopped parsley
3 tablespoons sherry

Heat stock to boiling point, keep warm.
Put avocado pulp through sieve.
Stir avocado pulp, chopped parsley and sherryinto hot stock.

Note: Do not heat soup with avocado pulp over direct heat. The flavour of the avocado is
spoiled by too much heat.
