Mini Vegetarian Pizzas
1 small green pepper, cut into short thin strips.
150 g mushrooms, thinly sliced
1 medium zucchini, thinly sliced
1 tablespoon oil
4 mini pizza bases
2/3 cup napolitaine pasta sauce
410 g artichokes, drained and quartered
130 g can corn Kernels, drained
1 cup grated mozzarella cheese
Preheat oven 210C. Brush two baking trays with oil or butter.
Heat oil in frying pan and cook the pepper, mushrooms and the zucchini for 3 minutes.
Spread pizza bases with the sauce.
Top with the cooked vegetables, artichokes and corn.
Sprinkle the mozzarella cheese.
Place on the prepared trays and bake for about 15 - 20 minutes until cheese is melted and the bases are crisp.
Serve immediately.
