Fluffy Egg Nests

2 slices bread (toasted)

1 oz butter

4 rashers bacon

2 eggs

Butter toast. Grill bacon. Seperate egg whites and yolks. Beat whites until light and fluffy.

Place bacon on toast and arrange egg white on top to form a 'nest'. Drop yolk in centre and grill

for 5 -7 minutes until yolk is set.

Approx. 350 calories a serving
