Healthy Rice Salad with Scampi
Boil 1 cupful of rice in salted water.
Drain it, season it with pepper, nutmeg and olive oil,a little vinegar or lemon juice.
Stir in some grated raw onion.
When cold add about 12 cooked scampi or prawns.
Add also a cupful pf green peas and some chopped parsley.
