Healthy Beef-Stuffed Baked Potatoes

4 baking potatoes

250g minced beef

2 tablespoons chopped onion or spring onions or chives

2 tablespoons butter or margarine

some grated cheese

Scrub potatoes and bake in very hot oven (450F or Gas Mark 8) until tender when pierced with

a fork.

Fry minced beef and onion in some butter.

Cut a slice from top of each potato and scoop out inside.

Mash thoroughly.

Add meat, butter and onion mixture to the potatoes and whip until light and fluffy.

Pile lightly into potato shells and top each with grated cheese.

Return to a very hot oven to reheat and melt cheese.

Serves 4.
