Coffee Sauce - Dessert

3 fluid ounces freshly ground coffee

6 fluid ounces boiling water

sugar to taste

1 tablespoon cornflour

1 egg yolk

a knob of butter

1/2 teaspoon vanilla

3 fluid ounces milk

Place coffee in a saucepan, add boiling water, heat to boiling.

Cover, turn off heat, steep 5 minutes, strain through double thickness of muslin.

Combine sugar, cornflour in a saucepan, add egg yolk, mix thoroughly.

Stir in coffee gradually.

Place mixture over hot water, cook for 8 to 10 minutes until thickened, stirring frequently.

Remove from hot water, stir in butter and vanilla.

Set in cold water to cool, stirring frequently

Stir in the cream gradually.

Chill, serve over ice-cream.

Makes about 1/4 pint.
