Honey Hearts
125g honey
125g sugar
75g butter
1 egg
1tsp cinnamon and grated orange rind
1/4 tsp ground cloves
a few drops of bitter almonds
1/2 tsp baking powder
400g flour
250g icing sugar
1 tbs single cream
Heat honey, sugar and butter until sugar is dissolved. Allow to cool, then add the egg and the
spice.
Mix flour and baking powder.
Knead the honey mixture and the flour together. Cover the dough and leave to stand for
2 or 3 days.
Roll the dough out on a lightly floured board 1/2 cm thick.
Cut out heart shapes and place on baking tray lined with a baking parchment.
Preheat oven to 175C (gas Mark 4) and bake the hearts for 10 min until golden brown.
Sift the icing sugar. make a thin paste with 2/3 of the sugar and some water.
Brush the hearts with the icing as they come out of the oven.
Make a thick paste with the remaining sugar and condensed milk.
Decorate with wavy lines.
