Gazpacho

There are many versions of this Spanish dish which is a cross between a soup and a salad.
There is the jellied version which is colourful, refreshing addition to any menu.
Spoon it into lettuce-lined bowls and serve it with assorted cold meat and hot rolls for a simple bit of luxury eating.
For a more formal occasion, present it as a first course.
Serves in soup bowls or small dishes bedded in crushed ice, makes it as a good appetizer.
