Gluten-free Pancakes


Serves 4

125g gluten-free self-raising flour
1 tsp gluten-free baking powder
1 egg
150ml (1/4 pint soya milk)
25g (1 oz) unsalted butter, melted
1 tbsp olive oil
100g (3 1/2oz) Blueberries, Strawberries or other.
maple syrup and creme fraiche to serve.

Mix flour and baking powder, whisk the egg and milk, add to flour and whisk until smooth.Whisk in the melted butter then sir in fruit (blueberries, strawberries etc....

Heat a frying pan with olive oil and spoon tablespoons of the mixture into the pan.  Cook for 3-4 minutes
until golden underneath then flip over and cook for a further 2-3 minutes. Repeat with the remaining batter.

Serve with a few more fruit scattered on top, some creme fraiche and a drizzle of maple syrup.
