Honey Muffins
1/4 cup margarine 1 cup buttermilk
1/2 honey or sugar 2 cups sifted all-purpose flour
2 eggs 1 tablespoon baking powder
1 cup cooked rice 1 teaspoon salt
1/2 teaspoon baking soda
Beat margarine and honey (or sugar) until light. Add eggs and rice and continue beating 2 to 3 minutes. Add
milk and dry ingredients that have been sifted together. Stir with spoon only until well blended. Fill greased
muffin pan 2/3 full. Bake at 400 degrees for 20 minutes, or until well done. Remove from pan at once.
Makes 12 muffins.
