Cinnamon Stars


600 g almonds 100 g apricot jam 3 egg whites
15 g cinnamon 125 g sugar 125 g icing sugar
2 tbs lemon juice

For the decoration : 1 egg white 80 g icing sugar 1 tbs lemon juice

Grind the almonds and mix the cinnamon. Pass apricot jam through a strainer. Beat the egg
whites until stiff, and gradually add sugar and icing sugar. Stir the lemon juice and jam into the
egg whites. Fold the almonds with a wooden spoon. Leave the dough and refrigerate for 2 hours.
Divide the dough into portions. Roll each portions between two sheets of cling film.
On a baking tray lined with baking parchment, cut out stars and place on tray.

For the glaze: whisk the egg white until stiff, gradually add sifted icing sugar and the lemon juice.
once creamy, spoon the mixture over the stars.

Bake cinnamon stars in a warm oven 120C for 25 - 30 mins(dry rather than actually bake them)
Cool the stars and store in a cake tin.
