Healthy Rocket, Basil and Onion Salad
1 bunch (120g) rocket
1/4 small onion, thinly sliced
1/2 cup fresh Basil leaves
Dressing: 1 tablespoon wine vinegar
1/4 cup (52ml) olive oil
1 teaspoon horseradish cream
1/2 teaspoon sugar
Combine rocket, onion and basil in bowl; drizzle with dressing.
Dressing: Combine all ingredients in screw-top jar and shake well.
