Barbecued Lamb Shanks

4 fluid ounces olive oil

1 tablespoon lemon juice

1/2 teaspoon thyme

1 tablespoon tomato puree'

1 teaspoon dry mustard

1 small onion, grated

4 garlic cloves

4 lamb shanks

4 whole red peppers

Combine first seven ingredients for marinade. Insert split garlic clove in each lamb shank.

Arrange shanks on long skewers, alternately with whole de-seeded peppers. Prick meat all

over with fork, then pour marinade over it. Let meat stand for 2 hours,then remove.

Roast directly over coals 4 to 5 inches from heat for about 1 hour or until meat is tender.
