Shoo-Fly Pie - Dessert
A Pennyslyvania Dutch single-crust pie with a cake-like filling, topped with crumble made of
flour, sugar and margarine.
1 ounce sifted flour
4 ounces sugar
1/8 teaspoon salt
3 tablespoons margarine
1 egg
4 ounces black treacle
2 tablespoons boiling water
1/2 teaspoon bicarbonate of soda
1 unbaked 9-inch pie case
Mix flour, sugar, salt and margarine together until crumbs are formed.
Beat egg until light and fluffy.
Add egg to black treacle, boiling water, and bicarbonate of soda is dissolved.
Add all but 1 ounce crumb mixture to black treacle mixture and stir until well blended.
Pour into the pastry lined dish.
Sprinkle top with reserved crumbs.
Bake in moderate oven (375 F) Mark 5 for 35 minutes.
