Homemade fresh Lemonade - Drink

7 large lemons, well washed

1.2 litres boiling water

75-100g caster sugar

To serve: ice cubes optional

Thinly pare the rind from six of the lemons.

Put the rind into a large heatproof jug or bowl and pour in the boiling water.

Cover and leave to infuse for an hour.

Squeeze and strain the juice from the pared lemons and pour it into a large serving jug.

Strain the water from the lemon rind into the jug, add sugar to taste and stir until the sugar

has dissolved.

Thinly slice the remaining lemon, and add the slices to the jug.

Cover the jug with cling film and chill in refrigerator for 2-3 hours.

Serve the lemonade as it is or add some ice cubes and decorate with a few leaves of mint.
