Healthy Hot Chicken Fillet Rolls

4 chicken breasts fillets

1/2 cup cornflour

2 eggs, lightly beaten

1 cup breadcrumbs

2 tablespoons Cajun chicken seasoning

2 tablespoons oil

4 round bread rolls

4 lettuce leaves

mayonnaise

Trim chicken of excess fat. Flatten each fillet . Toss in flour and shake off excess. Dip into

egg a piece at a time, then coat with combined breadcrumbs and seasoning.

Heat oil, add chicken, cook and drain on paper towel.

Cut rolls in half horizontally, place a lettuce leaf on each roll.

Top with chicken fillet and dressing.
