The Campisi family business began back in 1854, and since then we have continued the ancient art of
 manually processing and preserving selected fresh fish from the Jonio and Mediterranean seas.
Our products include hook-and-line fished Tuna, Swordfish, Grouper, Ameberjack, Anchovies, Sardines... and a wide range of vegetable products, such as the p.g.i. Pachino cherry tomato in all its
possible variations, Bottarga (salted roe), Suppizzata (tuna sausage), and Mosciame (cured tuna fillet), the classical specialities of the Sicilian seaside cuisine, originate from an ancient food-preserving tradition which has reached this day and age thanks to the historical tuna fishing craft, with roots in remote epochs.  The great care taken throughout the manufacturing processes guarantees the maximum safety and authenticity standards of our food products.

Salvatore Campisi, who embodies his family's fifth generation commitment to handcrafted
processing of Tuna fishery and Bottarga products, along with Red Tuna, Grouper, Swordfish, Amberjack and Mullet, is acknowledged as one of the last sea craftsmen and connoisseurs of the 33
flavours of tuna, in honour of his experience in the field of ancient  - and nowadays almost forgotten -
food processing techniques, Salvatore Campisi has received many awards from the Sicily region and his business activity has often been mentioned in culinary art publications such as "Le Buone Cose"
by Veronelli, Slow Food, Gambero Rosso.... He refuses to have his firm process tuna, or any other fish, fished with the "mattanza" (massacre" ritual, but only works hook-and-line caught fish, in respect of the most ancient traditions and of a healthy relationship between man and nature.  The employment of ancient techniques, dating back to the Arab period and refined in time in the small
village of Marzamemi, such as drying and maturing the tuna fishing products in an area blessed with a particularly favourable climate, has awarded Campisi a well-earned reputation as one of the last
surviving firms with a real knowledge of disappearing traditions calling for protection and recognition.

Her at Campisi, fish processing is not just limited to the preserving operations, but also embraces the transformation and realization of a number of specialities made with Tuna, tuna Bottarga, Swordfish, Amberjack, Mackerel and Anchovies. The Campisi fishery catch is processed and carefully sesoned to achieve refined "pesto" (crushed condiments) creams and pates with a typical seaside flavour; these delicacies are prepared with special care, following exclusively handcrafted recipes pertaining to the historical traditions of the island, using, among other things, olive oil, red hot chilli pepper, fresh parsley, garlic. dried cherry tomatoes and capers.

The Pachino cherry tomato is renowned worldwide for its sublime sweetness and fragrance, as well as for having a high vitamin C, mineral salts, lycopene and beta-carotene content,  The inimitable
flavour of this tomato, awarded the Protected Geographical Indication distinction, can only be found
in the lands where it is cultivated and worked.  Campisi processes tomatoes and the small Pachino
tomato right on their site of origin, keeping their natural properties unaltered and preservative-free.  Dried or semi-dried, loose or packed in oil, turned into sauce or paste, with or without anchovies,
Campisi works the "red gold" in all its possible variations.

Standard and small tomatoes are used in special processes for the preparation of ready-made, essentially fish-based sauces.
In view of its strong bands with the island's traditions, Campisi could not fail to provide the classic flavours of the Sauces , ready-made with Sardines, Tuna, Grouper, Amberjack, "alla Pescatora" (fisherman style)with Squid Ink, ready-made especially for you.  Preparing a plate of spaghetti with all the taste and aromas of Sicily will be really easy

pesto  condiments, creams and pates.  The origin of the ingredients and the  handcrafting techniques will return to the most demanding palates the full flour and fragrance of olives, artichokes, cherry tomatoes  aubergines, mushrooms, all the products required by our devotion to the traditional
Sicilian recipes.

The tastes and aromas of the Sicilian land are also found in the selection of Salt of strictly marine origin, whether plain or seasoned with spices and herbs, ideal for the preparation of delicious dishes.
The caper and its fruits, the so-called "Cucunci" with their intense and particulary mellow flavour, but also the origanum, the red hot chilli pepper, and the "olio santo" (hot olive oil)  are all high quality products selected and marketed by Campisi in the typical spirit that characterizes the firm's entire production.
