Home -made Broccoli and Blue Cheese Soup


1 Onions, chopped
1 Broccoli about 500g cleaned and chopped
2 medium Potatoes
1/2 litre vegetable stock
75g Mascarpone Cheese
75g Blue Cheese

Fry in a little olive oil, the broccoli, potatoes and onion, add the vegetable stock and
bring to the boil. Simmer.  Blend the mixture and add the cheese. Garnish with a little
blue cheese and parsley.
