Gluten-Free Scones
Good for afternoon tea !
Makes 8 - 10
You Need: 250g gluten -free self-raising flour
1tsp baking powder
50 g unsalted butter
grated rind of 1 lemon
50g caster sugar
1 egg
15ml milk
- Preheat oven Mark 220 degrees (425 F gas mark 7)
- Sift the flour, baking powder and rub butter in a bowl, until it resembles fine
breadcrumbs
- Add the lemon rind and sugar
- Beat the egg and milk and add to the flour, mix to make a soft dough.
- Use an ice-cream scoop, make 8 to 10 rounds put into a baking sheet
- Bake 12-15 minutes until risen and golden. Leave on a rack to cool, before serving
with cream or jam.
