Black Olive Pate' Recipe


250g  pitted roughly chopped black olives
2 crushed cloves garlic
Grated rind of 1 lemon.
4 tbs lemon juice
60g Rikotta
Seasoning

Place all ingredients except pepper in a food processor.  Mix until smooth, add pepper to taste.
Place in a serving dish, cover with cling film, chill  before serving.
