Roast Beef Salad

150g sliced rare roast beef
1 small raw beetroot, cut into matchsticks
75g curly endive
100g snow peas, cut into 3cm pieces
2 tablespoons sour cream
2 tablespoons olive oil
2 teaspoons whole grain mustard

Wash and dry endive. Place snow peas into a large pan, and blanch for 1 minute.
Cut roast beef slices into strips. Arrange the endive on individual plates, top with snow peas beetroot and roast beef strips
Whisk sour cream, oil and mustard until combined. Place a spoonful on each salad.

Serves 4 .
