Apple Crunch with Yogurt Topping
675 g cooking apples, peeled, cored and thinly sliced
175 g sugar
125 g digestive biscuits
75 g margarine
150 ml natural yogurt
1 teaspoon cornflour
Some demerara sugar, to decorate
Place the apples in a 900 ml pie dish, cook in microwave Full (100%) for 3 mins.
Crush the biscuits, add the sugar, mix in with the melted sugar.
Then spread on top of the cooked apples.
Topping: Mix yogurt and cornflour in a small bowl, stir until well blended. Put in a microwave
LOW (30%) stirring frequently until it thickens.
Pour the yogurt topping over the apple pudding, sprinkle over the demerara sugar and serve hot or cold
