Rosti (Swiss Fried Potatoes)


Rosti is a simple dish, but the preparation will take some time.

1 kg potatoes
3 tbs butter
1 tsp salt
2 tbs milk

Boil the unpeeled potatoes until semi-tender the day before preparation.
Peel and grate, using a grater with fairly large holes.
Heat the butter in a pan. add the potatoes and sprinkle with salt.
Press into a round loaf.
Sprinkle with milk and cover securely.
Reduce the heat as soon as the potatoes begin to sizzle.
Fry very slowly for another 30 minutes.
Fry until you have a brown crust.
