Lobster Cases
Filo pastry
1/2 kilo lobster
1 cup tea
2 curry leaves
2 shallots,finely chopped
1 parnsip, finely chopped
Sweet Chili
Boil the lobster for 8 minutes in simmering water. Shallow fry the shallots and parnsip for at least 4 minutes. Add curry leaves and tea and reduce. When the sauce has reduced, fold in a dash of sweet chili and add the lobster.
Remove from heat . When cool place filo pastry, close the pastry, glaze with oil and bake in the oven until they turn a nice, golden colour.
Serve the cases with a small salad sprinkled with sesame seeds and pistachios. Drizzle the salad with balsamic reduction and garnish with lemon segments.
