Oriental Prawns
2x 340 ml (12 oz) beer, preferably lager
900g medium prawns, peeled and deveined
2 tablespoons olive oil
2 mild red chillies, seeded and finely chopped
2 tablespoons soy sauce
2 tablespoons freshly squeezed lime juice
4 teaspoons grated fresh peeled root ginger
1 teaspoon sugar
4 tablespoons finely chopped fresh coriander
In a medium saucepan over high heat,bring the beer to the boil. Add the prawns; bring back to the boil. Remove from the heat, cover, and allow to stand for 2 minutes or until the prawns turn opaque and curl.
Put the olive oil in a small saucepan over medium-to-high heat, and cook the chillies, soy sauce
lime juice and ginger for 2 minutes. Remove from heat and stir in the sugar; cool.
Combine the sauce and the chopped coriander with the prawns and toss gently to coat the prawns.
Serve cold or at room temperature with cocktail sticks
