Homemade Marrow Jam
1 lemon jelly
2 lbs peeled and cubed marrows
2 lbs sugar
1 dessertspoon Ground Ginger
Juice and grated rind of 1 lemon
Leave peeled and cubed marrow covered with 1 1/2 lbs sugar overnight
Next day add remainder of sugar, ginger and lemon.
Simmer till tender (1 - 2 hours), then dissolve the jelly in the mixture
Cool and jar.
