Homemade Pickled Cocktail Mushrooms

About 8 ounces canned button mushrooms

8 fluid ounces white wine or cider vinegar

1 tablespoon sugar

1 teaspoon salt

1 shredded bay leaf

3 cloves

3 whole black peppercorns

1 clove garlic, sliced

1 slice lemon

Combine vinegar, seasonings and mushrooms liquid. Boil 3 to 4 minutes. Add mushrooms. Turn

into a jar and let stand overnight.

Letting them stand from 1 to 2 weeks will improve the flavour. Serve whole on sticks or chop and

use as a canape' spread
