Healthy Prawn and Cucumber Cups

250g cooked prawns, shelled

1/3 cup low-fat plain yogurt

1 small fresh red chilli, finely chopped

2 teaspoons grated fresh ginger

1 clove garlic, crushed

1 teaspoon chopped fresh coriander

2 medium cucumbers( 560g)

Combine prawns, yogurt, chilli, ginger, garlic and coriander in bowl, cover, refrigerate for 1 hour.

Make 4 cups by cutting cucumbers diagonally into 5 cm slices, scoop out enough seeds to make

a hollow in each cup.

Fill with prawn mixture.

Only 56 calories per serve.

Ps. Not suitable to freeze
